Butterscotchers
These chewy, buttery-tasting cookies with bits of butterscotch are delicious straight from the oven or up to three days old - if they last that long!
Ingredients
1/4 cup margarine, softened


1 cup plus 2 tablespoons all purpose flour
1/3 cup firmly packed brown sugar

1/2 teaspoon ground cinnamon
1/3 cup sugar






1/2 teaspoon baking soda
Egg substitute equivalent to 1 egg, or 
1/4 teaspoon salt
whites of 2 large eggs


1/2 cup butterscotch morsels
1 teaspoon vanilla, butter, and nut
flavoring
Preheat oven to 350 degrees F.
In a medium bowl, with an electric mixer on low, beat margarine until smooth.
Add sugars; beat until well blended.
Add egg substitute and vanilla, butter, and nut flavoring; beat until well blended.
Stir in butterscotch morsels.
On two nonstick baking sheets or baking sheets line with cooking parchment, drop batter by rounded teaspoonfuls 2 inches apart (12 cookies on a baking sheet); set one baking sheet aside.
Bake cookies on other baking sheet for 9 minutes (cookies won't look quite done). Let lookies stand on baking sheet for one full minute to finish cooking without drying out. Transfer cookies to a cooling rack immediately so they won't stick to baking sheet; let cool completely.
Meanwhile, bake cookies on second baking sheet.
