Lemony Lime Squares

A double dose of citrus goes into a cherished classic .   Though these bars require a
lot of ingredients, they are easy to prepare.

Ingredients

Vegetable oil spray      2 tablespoons all-purpose flour
1 cup all-purpose flour         1/2 teaspoon grated lemon zest
1/4 cup  chopped pecans     3 Tablespoons fresh lemon juice
1/4 cup light stick margarine,           1/2 tablespoons fresh lime juice
  cut into 4 pieces(about 2 medium limes)
2/3 c sugar   1/2 teaspoon baking powder
Whites of 2 large eggs2 tablespoons confectioner's sugar
Egg substitute equivalent to 1 egg
or 1 large egg


Preheat oven to 350 F.  Spray an 8 inch square baking dish with vegetable oil spray.

In a medium mixing bowl, combine flour, 1/4 cup sugar, pecans, and margarine; beat with an electric mixer on medium until mixture is crumbly.  Press evenly on bottom of baking dish.

Bake for 15 minutes.

Meanwhile, in same bowl, beat remaining ingredients except confectioners' sugar on medium for about 2 minutes (mixture will be thin).  Pour over hot crust.

Bake for 20 30 23 minutes, or until topping is set (mixture doesn't giggle when gently shaken).  Let cool on a cooling rack for 30 minutes before cutting into squares.  Dust with confectioner's sugar just before serving.
